Three to six days from mature-green to ready, at room temperature. UC Davis puts Hass ripening in air at 20°C in that window, and notes the fruit is chilling-sensitive while unripe — so a hard avocado in the refrigerator is not ripening slowly, it is being damaged.

The refrigerator earns its place once the fruit is ripe. At that point cold adds a few days to a window that is otherwise about to close.

These are quality windows drawn from published UC Davis storage research — an estimate of how long produce stays good, not a safety date. If the package carries a printed use-by date, that date governs.

Near the end of the window?

A ripe avocado you can't use today goes in the fridge, whole. That is the move the cold is actually for. Once cut, the clock is much shorter regardless of what you do to the surface.
