Three to five days from the moment it is opened or sliced. USDA puts opened-package and deli-sliced luncheon meat at three to five days, against two weeks for an unopened sealed package.

Meat sliced for you at the counter is already in the short window when you carry it out. There is no sealed phase for it.

These are quality windows drawn from published USDA food-safety guidance — an estimate of how long food stays good, not a safety date. If the package carries a printed use-by date, that date governs.

Near the end of the window?

This is the food where buying less genuinely wins — a half-pound you finish beats a pound you throw out, and the per-pound price rarely makes up the difference. Frozen it keeps one to two months, though sliced meat freezes into a solid block unless you separate the layers first.
