One week in the refrigerator. USDA puts bacon at exactly that, and one month in the freezer — a notably short freezer window for a cured product. The cure buys bacon a week where raw sausage gets one to two days, but it does not make bacon a keeper.
The fat is why the freezer window is short. Fat goes rancid in the cold long before anything else does.

Near the end of the window?
Cook the whole package. Cooked bacon keeps well refrigerated and reheats in seconds, and rendered fat is worth saving on its own. If you are freezing, separate the slices with parchment first — a frozen brick of bacon has to be thawed entirely or not at all.
